Rachael Ray, Oprah Winfrey and Me? Yes we have something in common, a favorite WHEY to enjoy Baked Goods and it’s from Protein Bakery!

Protein Bakery LogoThe Protein Bakery makes luscious Cookies, Brownies, Blondie’s and Mini’s. My husband and I shared the products that I received for a review. I received a Black and White Blondie and a Double Chocolate Brownie (not pictured in the review, these were the first victims consumed by hubby and I, unfortunately the pictures didn’t turn out), Peanut Butter Cookies (package of 2), Chocolate Chocolate Chip Cookies (package of 2), Peanut Butter Blondie Mini and a Chocolate Chip Brownie Mini.

Protein Bakery Assortment for ReviewThe full sized Brownie and Blondie that we tried were really filling, we split them in half and exchanged halves so that both hubby and I had part of that Black and White Blondie and the Double Chocolate Brownie. These were really made for a big appetite. The chocolate, wow! Very very sweet and rich… this was when I discovered that I really loved the Blondie, not quite as sweet and yet so very tasty. Hubby is normally the Brownie guy, I thought for sure he’d go nuts over the brownie, however, I truly was surprised when hubby came over to the lighter side with me.

I couldn’t believe that even splitting the products in half with hubby we found ourselves so very satisfied with our share of Protein Bakery’s Baked Goodies. Our taste buds fell instantly in love and our tummies were so quickly satisfied.

Protein Bakery knows how to treat their customers right as their products are:

  • Gluten Free
  • Trans-Fat Free
  • Preservative Free
  • Wheat Flour Free
  • Kosher
  • High in Dietary Fiber

The products are full of such goodness as rolled oats and the finest chocolate… and so much more.

And they bake small batches from scratch daily and they have been doing this since they opened in 1999! Happy 15th Birthday Protein Bakery! πŸ™‚

What can I say? I haven’t tried anything nearly as delicious and satisfying as the baked goods that I was fortunate enough to receive from these wonderful folks. And I don’t know how else to describe this, from the mouth happy goodness to the tummy crave crushing satisfaction, to knowing how healthy these baked goods are for you, the experience makes me feel truly sexy! Yes, I said it… I have never been so fully satisfied by desserts like I tried for this review! And I couldn’t believe it, my favorites were not the brownies! Yes, chocolate, yes the brownies where decadent… but boy oh boy I have Blondie Lust for the Black and White Blondie and the Peanut Butter Mini Blondie.

Okay so you get the idea, I am in LOVE with Protein Bakery and all their offerings and I surprised myself as I found that I loved some products more so than the chocolate ones.

The Founder of Protein Bakery is, Stephen Charles Lincoln and this man had lost 80+ pounds and became a fitness instructor. And trust me, he has great taste in making products that are both good for you and satisfying at the same time… gourmet flavor and good for you may sound too good to be true, but it’s TRUE! And I remember that I read somewhere about Mr. Lincoln placing his Protein Bakery Products in the Freezer, and he said that his products make “The Worlds Best Ice Cream Cake”… it was also suggested that they can be eaten frozen! Yummy, what a great idea for a Hot Summer Day Treat!

I found that The Protein Bakery is not only in the US, but they are now in the UK as well now! Congrats to The Protein Bakery!

I was asked to review Organic Matcha Green Tea Powder made by Kiss Me Organics, and I couldn’t have been more excited. I love trying out my ol’ taste buds on something new and different for me, not to mention that I love to create my own recipes as well.

KissMe Organics Front View of Organic Matcha Green Tea packageI had some unusual products made with Green Tea in the past year, one of which was Green Tea Ice Cream, something that I was curious about but wouldn’t have bought ot for myself for the fear that I wouldn’t like it (we are all watching out pennies now a days, aren’t we?) When this review was offered up I couldn’t help but sign up for this review to see what I could make with it and see if I would like it.

I wanted to learn more about this green tea powder, it’s uses and benefits. I already knew one thing about green tea, it is a very good antioxidant. Being an antioxidant, I had heard that green tea, itself, helps to prevent cancer. Since my husband had Non-Hodgkins Lymphoma & bladder cancer… we’ve had more green tea around the house, hoping that my husband and I could benefit from drinking it.

Reading the label on the Organic Matcha, I learned a lot about this product, the benefits, some of the uses and more.

At first I just thought the matcha was going to be a form of an instant tea. When I saw the pretty green cupcake on the label, and the mention of baking, my brain started running wild with what Flavors would taste good with the Green Tea. Being cautious with the taste-buds in my household, I thought that a sweet cupcake was the best idea indeed… so at first I thought I would find a combination of Honey and Lemon.

A neighbor had recently introduced me to “Cake Mix Cookies” and told me how simple they were to make. So I decided to play around with a Cake Mix (I chose yellow) for an easy cupcake recipe. I was surprised that my first attempt at this was highly successful! My husband and I both loved my creation (recipe coming up).Β  I even decided to share 5 of my cupcakes with the neighbors, they all seemed to really like it. One even commented that they would give it an 8 out of 10 but, if I brought more over I would get a 10! lol

The frosting I made for this Green Tea Cupcake was also a hit and we found it added some more fruity sweetness to the cupcakes (this recipe is coming up too!) This just goes to show you how very excited I am to use a product when I create my own recipe just for the review.

I take the risk of posting my creation for all of you my beauties, as well as forΒ  the company that supplied the product (If post my recipe, all I ask for is a link back to my blog in exchange for sharing my recipe). I really can’t wait for some of you to try to make this and let me know what you think of my invention… at the same time I have nervous excitement, after all, it’s my baby and I am setting out into the big wide world to be used and judged by others.

Again the idea for this Cupcake came from a friend telling me about her Cake Mix Cookies & hearing how they just add things to the cake mix cookies to make new and different flavors.

Preheat Oven to: whatever your cake mix recommends for cupcakes & your pan color. (I usually turn down the oven by 25 degrees when it’s a dark pan.)

Mariah’s Lemony, Green Tea Cupcakes:

  • 1 Cake Mix – white or yellow (I used yellow Generic Cake Mix)
  • 1 Large Lemon or 2 Small Lemons – you will be using the Lemon zest & the juice. (I used 2 small lemons, as the only cost me about 54 Cents each and a large Lemon was almost 2 dollars)
  • 1 to 2 Tablespoons of Organic Matcha Green Tea Powder (I used 2 Tablespoons, but next time I may cut it down to 1, some people weren’t to sure about the green tea aftertaste… personally I liked it).
  • 1 teaspoon Lemon Extract (Optional) I had decided, by smell, that I wanted to add even more lemony kick to the cupcakes
  • & Misc. ingredients called for on cake mix – (I used 3 eggs and the 1/3 Cup of Canola Oil).

1) Lightly Zest your Lemon(s) into a small bowl – (making sure not to get the white part in the zest.)Β  I set the bowl with the Zest & the Zest tool aside .

2) Squeeze out the Juice of your Lemon(s) into your liquid measuring cup. Add enough water to liquid measuring cup to equal the water amount called for in the Cake Mix instructions.

3) In the small bowl of lemon zest, pour your Lemon-Water Mix over the zester into the bowl (so as not to waste any of the flavor filled zest).

4) With Mixer on very low speed, slowly add your ingredients to the cake mix, scrape the sides of the bowl and once mixed well turn up the blender to the mixers cake setting (on my mixer, that is about Medium speed).

5) Place in Oven, the Cupcakes will be done when a toothpick inserted in the middle comes out clean

Once the Cupcakes are cooled you can frost them.

For this frosting I was inspired by Wilton’s French Buttercream Frosting Recipe

3/4 cup of Frozen or fresh Blackberries (blend this up well in your blender, if you wish you may strain the seeds out in a fine mesh strainer) <— I have an excellent blender and so I didn’t need to strain the seeds out, you could hardly detect them.

  • 2/3 Cup sugar
  • 1/4 Cup flour
  • 1/4 teaspoon salt
  • 3/4 Cup Frozen Blackberries Blended (Optional: you can put through a fine mesh Sieve to get rid of the seeds, I didn’t)
  • 1 Cup butter , softened
  • 1 teaspoon Pure Vanilla Extract


Place sugar, flour and salt in saucepan and mix thoroughly, stir in Blended Blackberries. Cook over medium heat and stir constantly until very thick. Remove from heat and pour into a medium mixing bowl.

Cool to room temperature. Add 1/2 cup butter at a time (cut into several pieces) and beat at medium-high speed until smooth.

Add vanilla and beat well.

Chill icing for a few minutes before decorating.

HINT: For Easter Cupcakes, like I made, add some jellybeans! Nummy!

Iced cupcakes must be refrigerated until serving time.

Perhaps the “powers that be” at the store just happen to believe that these chocolates would cross breed with the others if they stood too close to them. After all, dare I say, these Chocolates are so rich and delicious that they are sexy, so who could blame the other chocolates for wishing to breed with them? πŸ˜› lol

Our Valentines Day has started out early at our house, when a package arrived with some yummy Chocolates enclosed! Now I have to say that this package from Newmans Own Organics was just full of goodies for more reviews, that are yet to come… yummy Snack Attack, once again at my house. As you may recall hubby had some 4 stints placed recently so snacks are rare at my house, so I am limiting the reviews to a few related items at a time here. lol Gotta help him get his girlish figure back and mine too for that matter after my years on steroids for Lupus SLE. Anyway when the box of goodies arrived, I saw so many things that I almost threw out the chocolates, by mistake… the chocolates were sealed up in a foil bubble wrap, and for some silly reason, I thought it was an ice pack… because it felt so cold… really I didn’t know why an ice pack would be in there this time of year. lolΒ  As I was preparing to toss out the foil bubble wrap “ice pack” I felt it, wondering if I needed another ice pack for our chronic pain, I realized that it was tightly wrapped somethings and not an ice pack inside… to my delight I found my favorite guilty pleasure inside… Chocolate! And not just Chocolate, dark Chocolate and not just dark chocolate, but Newmans Own Organics Chocolate! OMG, I died and went to heaven just knowing what wonderful treats were in store for me and my dear hubby, just in time for Valentines Month.Assorted Newmans Own Organic Chocolates


Why do I keep saying Valentines Month? Why should we celebrate love just for one day? Why not a whole month, or for that matter the whole year around? πŸ™‚ Well for the sake of the blog, we will celebrate Valentines Month! lol

Hubby doesn’t like to put his teeth in (long story, short he was in Vietnam and exposure to the chemicals seemed to cause his teeth to go bad from the inside out and putting in dentures is a pain in the rear for him and he’s far from vain) so he has had the pleasure of enjoying most of the wonderful filled cups… well, all but he had to share half of the raspberry filled ones with ME!!! OH no… lol they were too good to let him enjoy it on his own. The peanut butter ones were just as tempting, but I did only sample one, and gave him a taste of my chocolate orange bar, he had to suck on this delicious morsel as the dark chocolate is nice and solid.

Now,Β  these chocolates are not like that cheap yucky chocolate that has a lot of junk added to it, nor does it taste like wax, like a certain popular chocolate from a Company beginning with an “H”. To me that “H” named companys chocolate tastes too light and too waxy, yup this foodie has become spoiled with these wonderful Newman’s Own Organics Chocolates! πŸ™‚raspberry filled super dark chocolate cups


And Oh My, you need to try these Dark Chocolates with Coffee, nothing compares! Remember these are organic. And my biggest recommendation for those of you buying Chocolate for Valentines Day, is the Raspberry Filled Cups, oowey gooey nummy num num! What can I say words escape me, all but Juicy Raspberry Goodness! πŸ™‚ Don’t believe me? My next favorite Chocolate is the Espresso Dark Chocolate, the great taste and finely ground bits of espresso beans mixed in. OH YEAH! And the Mocha Dark Chocolate, yummy yummy… and the Orange Chocolate, the heavenly taste of fresh oranges and dark chocolate. Between these flavors, I cannot choose my second favorite, I love them all… each one has a special characteristic of it’s own. Even the dark chocolate peanut butter centers are great too, not anything like those others that are out there… the others are far too salty for me and though I loved them years ago, they turned me off peanut butter centers in those cups… that is until I tasted Newmans Own Organics version, darn and here I promised hubby he could enjoy all but one of them in the package. lol

Oh my, I just realized that I just called these all dark chocolate, the filled cups (both raspberry and the peanut butter) are actually Super Dark Chocolate at 70%! Dare I say, so very good for you, in limited amounts… my Mother for a while served us all one piece of Extra Dark Chocolate a day while I was visiting once, it’s good for the heart and satisfying to the taste buds, I actually prefer very dark chocolate more so then milk chocolate now! πŸ™‚ Not to say that I don’t enjoy the occassional milk chocolate, but only the finest will do for me, as in Newman’s Own Organics Mocha Milk Chocolate… coffee and chocolate once again, in a sweet, creamy, melt in your mouth treat!

Speaking of treats let me say I have more reviews coming up with Newman’s Own Organics and the wonderful package full of goodies that they sent me… look forward to licorice, ginger snaps, pretzels and dried fruits! I have some great ideas, that I am developing my own recipes for the dried fruits (watch for it in the coming weeks).

The Birth of a Legend – Enstrom’s Almond Toffee – Review & Giveaway

Once upon a time, not too very long ago, there was a man named Chester Enstrom (we will call him β€œChet”). Chet was living in Grand Junction, Colorado with his family and in his spare time he made candies. Chet had a passion for making candy, and worked on perfecting his tasty treats as he gifted friends and family with them.

The Enstrom LogoChet had been known for his treats and upon the insistence of many folks, what started out as a hobby, became a business and a Legend (in my eyes at least). Enstrom’s was born. The birth year of this legend was 1960, to some of you it would be long long time ago, to me, well lets just say that I turned 50 just a few weeks ago. πŸ™‚

What happened to Chet?

Chet sold his company to his Son and daughter-in-law as Chet had decided to pursue his political carrier in the Colorado State Senate. And in 1966 Chet was appointed Colorado State Senator!

The Enstrom family has continued this legendary company still today

And the handmade candy making continues to this very day, some 53 years later, including the making of Chet’s Enstrom’s Almond Toffee… the product is still all natural.

Enstroms Almond Toffee BoxEnstrom’s, to my surprise, found my new blog location online and contacted me with a tasty offer that I just could not refuse, they asked me if I would like to review a 1 pound box of Enstrom’s Almond Toffee. I was lucky enough to have received my box the day after my 50th birthday, the birthday was a nothing event, but surprisingly after receiving Enstrom”s Almond Toffee, I felt a celebration coming on!

The Almond Toffee, is unlike anything I’ve ever tasted before, the crunch is just right in these tasty treats, as they seemed to break easily, melt in my mouth and have the perfect amount of the wonderful Almonds not only mixed in, but also ground into almost a powder and placed all over the milk chocolate topping. I am a choco-holic and the perfect amount of chocolate was on top.

Finally to the Almond Toffee from EnstromsAfter experiencing the Almond toffee, I found myself pouring what was left into my hands, just like a little piggy I dumped the crumbs of almonds into my mouth and savored the remnants, as I look into the box, that once held the precious Almond Toffee in amazement of how fast I emptied the box. I admit it, I now crave Enstrom’s Almond Toffee and I want to do another review each and every month! πŸ™‚ Hey they have sugar free Almond Toffee and oh boy, TRUFFLES???? Who could say no to truffles, NOT ME!Β  Oh how I’d love to try so many of their products!

I have seen that they have several shops here in Colorado, one not too far away from me in Arvada and they offer their sweet confections there as well as ice cream and this summer they will have coffee in this shop as well! Yay, I cannot wait to visit them and taste their ice cream and bring home some of their sweets for eating later and perhaps sharing. Or freezing so I can gift them to others, or even try them very cold in the summer heat! πŸ™‚
